Simple Tomato Pasta
A quick, flavourful pasta made with crushed tomatoes, garlic, and fresh basil. Perfect for weeknights.
Ingredients
- 400 g spaghetti
- 2 cans (800 g) crushed tomatoes
- 4 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp sugar
- Salt and black pepper, to taste
- A handful of fresh basil leaves
- Parmesan, to serve
Method
- Bring a large pot of generously salted water to a boil. Cook the spaghetti according to package instructions until al dente.
- Heat the olive oil in a wide skillet over medium heat. Add the garlic and cook for 1–2 minutes, stirring, until fragrant but not browned.
- Pour in the crushed tomatoes and add the sugar. Stir, reduce heat to low, and simmer for 15 minutes until the sauce thickens slightly.
- Season generously with salt and pepper. Tear in the fresh basil and stir through.
- Drain the pasta, reserving ½ cup of pasta water. Add the spaghetti to the sauce and toss well, loosening with a splash of pasta water if needed.
- Serve immediately with grated parmesan.
